Chef Carrie Leonard's Pork Dry Rub for Indoor BBQ It's almost 4th of July and I am not going to stand in front of an outdoor barbeque when it's 100 degrees outside! Make the rub and get it in the fridge and I'll have enough time to make sides and drinks and finish my chops on my indoor grill top (don't worry I'm bringing it with me! -- fits over the stove top) Pork Dry Rub for Indoor BBQ Ingredients: Yield: approx 8 chops 8 pork chops (bone in) 1 Tablespoon salt 2 Tablespoon brown sugar 1 Tablespoon dry mustard 1 Teaspoon cumin 1 Teaspoon chili powder 1 Tsp ground black pepper 1 Tablespoon Paprika (Spanish - mild) Method of Preparation: 1. Combine all ingredients but pork in gallon sized zip top bag 2. Shake 3. Rinse and pat dry each chop 4. Place chop in zip bag with dry rub one at a time to coat thoroughly 5. Place bag in refrigerator for at least 2 hours or overnight 6. Preheat griddle slowly to 350 -- 375 degrees, spray non-stick unless grill is seasoned 7. Place chops on griddle, cook 2 -- 4 minutes per side based on thickness 8. Brush with your favorite BBQ sauce while cooking
